Casino Queen in East St. Louis is rolling out a new seasonal lineup of signature dishes and in-house desserts.

Executive Chef Alex Eusebio has revamped the entire food and beverage operation to create a variety of dining experiences at all four of the casino restaurants, Prime Steakhouse, Market Street Buffet, Sevens and Deli & Chips.

At Prime Steakhouse, the steak and seafood restaurant, the chef introduced a new trend, Sous vide cooking, a French term for low-temperature, long-time cooking. The new method slowly poaches protein, resulting in infused flavor and tender texture.

Market Street Buffet has added a new feature, Market Street To Go, allowing guests to take their favorite combo meals on the run.

Barry’s Downtown Prime Vintage glamour and hospitality meet modern innovation and design at this classic steakhouse. Owners Barry Dakake, Yassine Lyoubi, Marco Cicione, and Donnie Rihn have created a restaurant that delivers the city’s finest steaks and seafood, creative cocktails and outstanding service. Located a short elevator ride away from the exciting action of our casino, this exclusive room's classic steakhouse ambiance and unforgettable view of the Las Vegas Valley enhance an already pleasurable experience.

Earlier this summer, Eusebio launched an in-house dessert program, offering a variety of specialty cakes, cupcakes, cheesecakes and more at the buffet.

Seasonal changes at Sevens include an ode to Canada with a poutine entrée made of crisp waffle fries topped with cheese curds and brown gravy. The chef also introducing a southern style pork chop fritter to the menu, served on a brioche bun with house-made garlic aioli. For dessert, Sevens will serve a sweet potato maple cheesecake and a s’mores lava cake.

Deli & Chips will have a comprehensive farm to table concept using fresh, all-natural ingredients from proteins, dairy, seasonal produce and artisan fresh baked breads.
